Can I sell peptides on Stripe, Shopify Payments or PayPal?
None of the three name peptides at all, which is exactly the problem. Merchants read that silence as permission, build the store, and find out where they stand only when a review freezes the balance. The absence of the word means the decision was deferred to an underwriter, not that it was made in your favour.

Stripe

Peptides appear nowhere in Stripe's prohibited or restricted lists. This is the prohibited-list clause that gets applied to them, and it turns on two judgements a reviewer makes about your site rather than anything you declared at signup: whether the product is safe, and whether your own copy makes claims about it.

PayPal

PayPal names no peptide either. This clause is broad by construction, and "other products that present a risk to consumer safety" is wide enough to cover a research peptide sold to the public without anyone having to argue about whether it is a steroid.

Shopify Payments

No policy of its own
Shopify Payments has no list of its own to consult. In the United States it runs on Stripe and PayPal, so a peptide merchant is being judged against the two clauses above, with Shopify unable to overrule either.

What actually happens
Signup succeeds, because nothing at signup asks the question. Processing runs normally for somewhere between two weeks and three months, which is long enough to build real volume and real confidence. Then a periodic review reaches the site, the catch-all is applied, and the account is closed with the balance held against future chargebacks. The severe version adds a MATCH listing, which follows the business and its principals for five years and makes the next application harder than the first.
What works instead
Declare the category up front to an acquirer that underwrites it deliberately, rather than hoping a general processor does not look. Expect to be asked for sourcing documentation, certificates of analysis, and product copy that does not read as medical advice. Where card acceptance genuinely is not available yet, ACH and crypto rails will take the money in the meantime, and they are a great deal better than a five-year listing.
